Brussels Sprouts Gratin

INGREDIENTS:

1 pound Brussels sprouts, cleaned and trimmed

2 slices bacon, cut into 1/2 inch pieces

salt and pepper (to taste)

1/2 cup heavy cream

1/4 cup crushed Ritz crackers

1/4 cup Parmesan cheese

2 tablespoons butter, melted

INSTRUCTIONS:

Preheat oven to 400 degrees. Lightly grease a baking dish. 

Bring a large pot of water to a boil. Add Brussels sprouts. Cook for about 8 minutes or until tender. Drain in a colander, then immediately immerse in ice water for several minutes until cool. Drain well then cut in halves.

In a large skillet fry the bacon until lightly browned. Add Brussels sprouts, salt and pepper to taste. Toss to even distribute seasonings. Add Brussels sprouts and bacon to the greased baking dish. Pour cream evenly over the Brussels sprouts, then sprinkle crushed crackers and Parmesan cheese on the top. Drizzle melted butter evenly over the top. 

Bake in oven until golden brown and heated through, about 25 minutes.
